Chicken Rollatini with Prosciutto and Cheese
- 4 chicken cutlets - thin slices
- 4 slices of Italian prosciutto
- 4 slices of Swiss cheese
- 4 small pieces of mozzarella - cut into rectangular shape
- 1 cup of plain bread crumbs
- 1/2 cup of parmigiano grated cheese
- 1 Tbsp. of dried parsley
- 1/2 cup of olive oil (or more if needed)
Place chicken cutlets between 2 sheets of wax paper or parchment paper and pat the chicken with a large spoon. In a dish, mix the bread crumbs with the grated cheese and parsley. Pour the olive oil into a bowl and dip the chicken cutlet, covering both sides. Then dip the cutlet into the bread crumb mixture.
Arrange the breaded cutlets on a baking sheet. Place a slice of Italian prosciutto on each cutlet, then a slice of Swiss cheese (add 2 slices if they are thin) and top with a piece of mozzarella.
Bake in oven at 450 degrees, uncovered for 20 minutes, until golden brown.
