Mom's Roasted Low-Calorie Asparagus

 
Asparagus is a low-calorie vegetable that is a good source of folate and potassium.  Our Mom enjoys telling us all the health benefits with each vegetable she cooks.  This is still her favorite.

It's a very easy and delicious recipe!  Minimal prep work involved.  And, this green asparagus vegetable is also high in antioxidants...which is really good for you!  Enjoy!


 Mom's Roasted Low-Calorie Asparagus
  •  1 bunch fresh asparagus, (about 30)
  •  2 Tbsp. plain bread crumbs
  •  1 Tbsp. grated Parmesan cheese
  •  1/4 tsp.  garlic powder
  •  2 to 3 Tbsp. extra virgin olive oil
  •   salt and pepper to taste 
Rinse, cut ends off the asparagus, about 2 inches from the bottom.
Steam asparagus for 3 minutes in a vegetable steamer.

In a baking pan lined with foil wrap,  for fast cleaning.
Spray some cooking spray onto the foil.
Lay the asparagus in a single row on baking pan.
Sprinkle and scatter some bread crumbs,  grated cheese,  salt,  pepper and garlic powder.
Drizzle olive oil over them.   
Bake at 350 degree,  for 15 minutes.  And serve.

Serves 6
