Easy and delicious steamed broccoli anytime! Simply steamed fresh broccoli, then add fresh garlic, light drizzle with extra virgin olive oil and you have a perfect low-calorie side dish every time!
The benefits of eating fresh broccoli are huge! If steamed, it can provide you with some cholesterol lowering benefits, as well as, help with our Vitamin D deficiency that some of us may have.
It also has a strong combination of both Vitamin A, in the form of beta carotene and Vitamin K. Be careful not to overcook broccoli where it becomes soft. That is an indication that it has lost some of its nutrients and flavor. Try to steam for a few minutes, until the broccoli is al dente, and the color is bright green. Enjoy!
Low-Calorie Broccoli Italian-Style
- 1 large Andy Boy Broccoli
- 1/3 cup of extra virgin olive oil
- 2 garlic cloves - diced
- salt and pepper to taste
Wash and cut broccoli into large pieces. Cut the cord and discard.
Using a knife, lightly peel the skins from the larger stems.
In a large pot, add about one inch of water. Add the broccoli and cover.
Steam for 5 minutes or until you can slip a fork through the stem easily.
Drain. Transfer the broccoli to a bowl.
Drizzle with olive oil and fresh garlic.
Add salt and pepper to taste and serve.
