Sweet Baby Peas are sautéed with onions, capers, and extra-virgin olive oil until they are caramelized and tender to perfection! These sweet peas are delicious and rich in Vitamins A, C and Iron!
They will compliment as a side dish to any main course. My husband Joe loves to cook on the weekends, and this is one of his favorites dishes that my kids ask for every time!
A light vegetable dish you can serve all year round. Made with simple ingredients you probably have on hand, such as frozen peas, sweet yellow onions and non-pareil capers (the ones that are marinated in vinegar), which adds wonderful flavors to the peas. I am sure your family will love them as much as we do!
Sweet Garden or Baby Peas with Onions and Capers
- 2 lbs. of Frozen of Sweet Garden Peas - rinsed (we used Birds-Eye)
- 1/2 cup of extra-virgin olive oil
- 1/2 cup of water
- 2 whole yellow onions - finely chopped
- 3 tsp. of capers ( we used Paesana, non pareil Capers)
- 1/2 tsp. fresh chopped parsley
- 1/8 tsp. cayenne pepper
- salt and pepper to taste
In a large skillet. Heat oil. Add onions and capers. Sauté onions and capers until caramelized.
Add the Frozen Peas with the 1/2 cup of water. Lower the heat.
Uncovered, and simmer for about 40 minutes. Stirring occasionally.
Add olive oil as needed to keep the peas moist.
Taste for salt and pepper. Serve !
