Roasted Red Bell Peppers on the Grill

Roasted Red Bell Peppers on the Grill are ideal and perfect store them in your fridge all season long. These roasted red bell peppers are very sweet, delicious tasting, and great to serve them alone, or as a side. An excellent source of carotene and vitamins A and C!

 

How to Make These Roasted Red Bell Peppers?

Red bell peppers are easily roasted on the grill for a few minutes until they are charred. Then they are marinated with extra virgin olive oil, a touch of salt, and fresh garlic slices.

Italians have been making these marinated roasted peppers for centuries and still today, they are loved by everyone.

Our simple marinade is the secret to giving these roasted peppers their wonderful and aromatic flavor.

 
 

When you combine the smoky flavors of these red peppers and infuse them with olive oil and garlic, they become incredibly delicious. 

They are so good, you won’t be able to stop eating them!

Ingredients for Roasted Red Bell Peppers on the Grill:

  • 8 to 10 bell peppers
  • extra virgin olive oil, as much as needed
  • 1/2 to 2 tsp. of salt
  • 4 garlic cloves – sliced or chopped
  • cooking spray
  • fresh basil – only when serving

 

Directions on How To Roast Red Peppers on the Grill… 

To roast peppers on the grill, you will need to follow these instructions: (*Full recipe card below!)

1. First, lay them down directly on top of your outdoor grill.   On medium-high heat, grill the peppers for a few minutes until charred on all sides. Grill them until lightly charred, about 3-5 minutes on all 4 sides. Use kitchen tongs to turn them, one by one.  Continue until all the peppers are done.

 2. Next, place the charred peppers into a large brown paper bag.  Close the bag, and allow the peppers to cool down.

*SECOND OPTION: you can place them into a pot with a lid. Cover. Allowing the peppers to steam for about 5 minutes. 

 3. When peppers are cooled enough to handle, then take them out of the bag, one at a time.

 4. Gently peel off the charred skins. While you are working with the peppers, use your fingers to pull them apart, and into pieces, then remove all seeds and membranes from the pepper. Discard all seeds and membranes.

 5. Place the cleaned peppers into a nearby bowl or on a plate, until all the peppers have been done.  QUICK NOTE: Do not rinse the peppers under water, you can rinse your hands, but not the peppers while working with them.

6.  Finally, place all the cleaned peppers into a mason jar or two.

 7. Fill the jars with extra virgin olive oil, fresh chopped garlic, and some salt.  Add enough olive oil (if needed) to level with the peppers to marinate them.  Mix gently and TASTE for salt.  Add additional salt if needed.

8. Seal the jars tightly, and marinate them at room temperature for several hours or more before serving.

 It’s that EASY!

Notes and Tips…

  • Can we refrigerate them? Yes, if you keep them chilled, they will keep fresh for up to 2 months.
  • If refrigerated, these peppers will only need a few minutes at room temperature for the oil to thaw.

Options for serving…

  • Make sandwiches! Our family makes sandwiches weekly with our favorite Italian bread, some prosciutto, and sliced cheeses.
  • Serve it as a side! Pull out a desired amount, add some fresh chopped basil, toss it, and set aside. 
  • Enjoy them alone with some toasted bread.
  • Add them to salads.
