Easy Cauliflower Salad


Easy Cauliflower Salad is an old recipe that our families have been making for years!  Light and delicious cauliflower salad marinated in a lemony vinaigrette with a touch of garlic and ripe black olives.  Super quick and easy to make. It's a fantastic low calorie and low carb dish your family and friends will love!

The key ingredient in this recipe is the lemon and garlic infused with the cauliflower giving a very refreshing light citrus flavor. Served chilled as a side salad, cauliflower is known as an anti-cancer food which is really good for you! It is low in fat,  high in fiber, along with Vitamin C and folate making this a very healthy salad for the whole family!

Here's a quick tip:  Try not to over cook the cauliflower, it can get mushy very quickly and change the texture as a salad.  It can be made 2 days ahead.  Always serve chilled, it's great on hot summer nights.


Easy Cauliflower Salad

  • 1 Cauliflower, small or medium size- cored and chopped
  • 1 garlic clove- minced
  • 1/4 cup of extra virgin olive oil
  • 1 + 1/2 fresh lemons- squeezed
  • 1 tbsp. of fresh parsley - chopped
  • Pinch of crushed red pepper
  • 3/4 cup pitted ripe black olives -sliced
  • Salt and pepper

Wash cauliflower, cored and chop into chunks.
In a large pot with 1 inch of water, add the cauliflower chunks and cover.
Steam them for 3-5 minutes. Remove and place into a salad bowl. 
Do not over cook.

Add all the ingredients and mix well. 
Refrigerate for 1-2 hours, allowing to marinate and serve.
Salad is even better when you marinate over night. Serve the next day chilled.

Serves 6-8

  1. wow that's healthy and tangy . i use a similar sauce for pasta .. but with cauliflower .. it will taste nice too!
