Easy Chocolate Pudding and Raspberry Mini Tarts

It's Valentine's Day!
And, we 're having company tonight with some friends.  I want to make a quick dessert that is simple and one that I could whip up easily right before my guests arrive.  I  had to think quick!  So I decided to make chocolate pudding and raspberry mini tarts!  I love the flavors of chocolate and raspberries together.

A delicate dessert,  creamy chocolate pudding with a touch of raspberry in individual pastry shells, which I call "tarts" is just the right amount of sweetness needed after dinner. And, perfect for a sweet treat after dinner on Valentine's. Quick and easy to make, especially when your entertaining and don't have alot of time.

I ran to Stop & Shop supermarket, and purchased the frozen mini fillo shells, a container of all-ready made chocolate pudding and fresh raspberries.  And WHA -LA! Quick and easy chocolate pudding tarts for dessert!  They are cute and bite size, and best of all, no need for plates or spoons when serving.... DELICIOUS!

Sprinkle some powdered sugar on top just before serving.  They are so pretty, they even make an elegant presentation!  Have a wonderful Valentine's Day everyone!

Easy Chocolate Pudding and Raspberry Mini Tarts
  • 2 packages of Athens Mini Fillo Shells
  • 1 container of Cozy Shack Chocolate Pudding
  •  Fresh Raspberries for garnish
  • Confectioners sugar to garnish

Open the packages of mini fillo shells, allow them to defrost for a few minutes.
Take a teaspoon or an espresso spoon, spoon a small amount of pudding into each shell.
Fill each shell about 3/4 with the pudding. Be careful not to over fill.
Top with one raspberry.  Garnish with powder sugar.
Immediately refrigerate. Best to prepare just before guests arrive.
When ready to serve,  display on a lovely platter and serve.

Yields: 30 mini chocolate pudding tarts
