And this recipe is very simple and not complicated. We prefer to roast these two together along with onions, garlic, herbs, extra-virgin olive oil, and crushed red pepper.

Roasted Potatoes and Sweet Red Peppers are roasted together with dried herbs, garlic, and extra virgin olive oil. This is an easy and very flavorful side dish that goes with practically any meal.

Prep Time 15 minutes
Cook Time 45 minutes
Total Time 1 hour

Ingredients

  • 5 Idaho potatoes - chopped
  • 4 Red Bell peppers- chopped
  • 4 garlic cloves - chopped
  • 1 large onions- chopped
  • 1/3 cup olive oil
  • 1 Tbsp. butter - chopped
  • 1 tsp. garlic powder
  • 1/4 tsp. crushed red pepper
  • 1/4 tsp. dried oregano
  • 1 tsp. sea salt
  • fresh ground pepper
  • cooking spray
  • 3 Tbsp. of extra-virgin olive oil, and extra

Instructions

  1. Preheat oven to 400 degrees.
  2. Spray a large roasting pan with cooking spray.
  3. Add all the ingredients together. Mix all together using your hands, or with two large wooden spoons.
  4. Roast in the over for about 40 to 45 minutes, turning them over once or twice. Potatoes should be soft and fork-tender. Remove when done. Taste and season with salt and black pepper to taste.
  5. Transfer to a serving platter. Drizzle some extra-virgin olive oil on top.
  6. Serve warm.
  7. Yields: 6 to 8 servings
