If you never had goat cheese spread on a toasted bread, I highly recommend you try it. When entertaining, you don't always need a cheese board with an assortment of cheeses that don't get consumed and then spoil after your party. At least that what happens with us.
Just serving one kind of cheese is enough for everyone to nosh on with crackers or warm toasted slices of bread. This is a simple and easy way to make a cheese ball that is rolled in crushed pistachios and walnuts for a elegant way to present an appetizer.
I used plain goat cheese with a small amount of cream cheese. Added some herbs, and worked it into a ball. Then rolled it into the crushed mix of nuts and chill for about 2 hours. If you don't want to use nuts, roll into a mixture of fresh chopped herbs. Either way, it's delicious to serve with drinks before dinner. Enjoy!
- 8 ounces plain goat cheese
- 4 ounces cream cheese, softened
- 2 tsp. fresh thyme, chopped
- 1/3 cup pistachios -chopped
- 1 Tbsp. walnuts - chopped
