EASY Mexican Spicy Bean Dip


EASY Mexican Spicy Bean Dip is simply my take for a cold party dip when I had to improvise one night. I quickly went into action and decided to use whatever I could find available in my kitchen. I had a few things fresh in the frig that I knew I could use; and I pulled together this amazing party dip in a flash!  I made it with sour cream, chunky salsa, spicy refried beans, black olives, green scallion onions,  and some cherry tomatoes.  And you know what ?  it  turned out unbelievable!

Creamy and smooth layers topped with fresh ingredients like the green onions (which I love) and fresh tomatoes which gave it a definite punch of flavors, and not to mention it had a nice spicy kick to it. Everyone really loved it.

It took only a few minutes to make and it turned out delicious!  I used spicy refried beans, and a medium hot chunky salsa, which I had in my pantry. This was so easy,  it was almost like making a soft taco but in a dip version! 

Just serve it chilled and with your favorite baked tortilla chips on the side.   Enjoy!
 

 EASY Mexican Spicy Bean Dip 
  • 1 cup Sour Cream
  • 1 cup Chunky Salsa - All Natural 
  • 1 can -16 ounce Spicy Refried Beans
  • 3 green scallion onions - minced
  • 3/4 cup or 4 ounce black ripe olives - sliced
  • 8 cherry tomatoes - chopped
Use a medium 14 x 10 inch serving platter. 
Spread a layer of refried beans on the bottom of the platter.
Then in a small bowl, blend together chunky salsa and sour cream.
Spread sour cream mixture over the refried beans.
Scatter on top with black olives, tomatoes and green onions.
Refrigerate for at least 1 to 2 hours.  Serve with baked tortilla chips!

Serves 6 to 8
