This is my healthier version of the beloved "egg sandwich." Only this one is fast, easy and fresh! What could be better? Nothing beats a fresh breakfast that is quick and delicious for the entire family to enjoy before running out to school or work.
I had dinner rolls sitting on the counter, and thought I would use them to make my sliders the following morning. I made a quick cheese omelet, cut it into thirds, then placed each one into the rolls and topped with a slice of ham. They turned out so good, my daughter who is a picky eater LOVED them!
So make extra! Because one sandwich maybe enough for us girls, but the men in your life will definitely want to eat more than one. I hope you enjoy these breakfast sliders as much as we do. Enjoy!
Breakfast Egg Sliders to Go!
- 2 whole eggs -scrambled
- 2 slices of American cheese
- 3 slices of fresh sweet ham (I used Boar's Head)
- 3 bakery dinner rolls
- olive oil cooking spray
In a non-stick skillet, spray with cooking oil.
Heat skillet for about 30 seconds, add the eggs to the skillet.
Cook the eggs for one minute.
Add the cheese slices on top, side by side.
Using a spatula to turn one side over and flip the omelet over to cook the other side.
Cook for another minute, or until eggs are done. Turn off heat.
Using the spatula and cut the omelet into thirds.
Slice open each dinner roll. Place a third of the cheese omelet into each roll.
Place a slice a ham on top of each one.
Close the rolls and serve.
