Broccoli Rabe and Sausage

 

Broccoli Rabe and Sausage.  This healthy green vegetable known as broccoli rabe, is lightly sauteed with garlic and olive oil and paired with grilled Italian spicy-sweet sausage. It is a delicious meal all by itself.  Broccoli rabe is loaded with vitamins and minerals; also known as a super food.

We like to buy the best quality of broccoli when shopping for broccoli rabe, because the cleaning becomes easy!  When you buy the best quality of broccoli rabe it sometimes comes already pre-cut and cleaned for you.

Broccoli rabe is known to be a very bitter vegetable. The little secret to making great broccoli rabe is simmering it with some garlic and chicken broth. They both not only enhance the flavor to the broccoli, but at the same time diminishes its bitterness.

We enjoy serving broccoli rabe and sausage from time to time.  Just serve it with some crusty Italian bread and call it a meal!!

Here’s a tip:  Cook sausages separately (whether you grill them outside or in the oven), this way you remove any excess fat.  You can use any Italian sausage when you make this dish.  But, if you can find the ones that are filled with cheese and basil, they’re the most tasty ones out there.

Ingredients needed for Sautรฉed Broccoli Rabe with Sausage

  • 2 bunches Broccoli Rabe- washed, large ends cut off

  • 1/4 cup extra-virgin olive oil

  • 1/8 tsp. crushed red pepper flakes

  • 6 large garlic cloves- cut into thirds

  • 2 pounds small Sweet Italian Sausages

  • 1/4 cup low sodium chicken or vegetable broth

  • salt to taste

  • olive oil cooking spray

Now let’s make Broccoli Rabe and Sausage, shall we?

In a large pot, add olive oil and garlic.
Heat on low heat until garlic turns to golden brown.
Add broccoli rabe and crushed red pepper.  Cover with a lid and simmer for about 3 minutes.

Stirring occasionally to cook evenly. Add the broth, cover and continue to cook for another 5 minutes. Broccoli is cooked when a fork can go through the end of the stem. Turn off the heat. Season with salt to taste. Set aside.

Spray your outside grill or baking dish with cooking spray.  Use a fork to prick the links a few times.  Grill sausages for about 20 minutes or less, turning once.

OR BAKE sausages in the oven at 400 degrees. Cook sausage links until they are brown and fully cooked, about 15 minutes for each side, (turning the sausage once).  Transfer to a serving platter.  Add the broccoli rabe and serve.

    9. On the grill, about 20 minutes or less, turning once.
    10. Transfer to a serving platter. Add the broccoli rabe and serve.
