Cod Saltimbocca is boneless cod fish wrapped with prosciutto, then simply sautéed for 4 minutes on each side until the prosciutto cooks to a crispy crust. Paired this seafood dish with a side of our garlicky broccolini and you'll have dinner ready in less than 25 minutes!
I have to tell you, this was the easiest dinner I have ever made, simply because sautéed broccolini took about 5 minutes to make and the cod fish cooked very quickly as well. And, this cod saltimbocca is a nice twist on the expected Italian version of the veal saltimbocca we usually have.
Last week we had an ice storm here in the South, and Whole Foods had very little seafood delivered to them, so I bought what was only available, some fresh boneless cod fish.
I didn't mind, we love cod!
Cod fish is a white meaty fish and the taste is not fishy at all. I think, even non-fish lovers will like this dish. The crispy prosciutto makes the cod so tasty, even my daughter enjoyed it. I think this is restaurant sophistication without any fuss!
The prosciutto and fresh parsley give enough flavor to the cod; therefore, no need to add any salt or a lot of seasonings. An awesome dinner to serve on meatless Fridays. It's also gluten-free and ideal to serve during lent.
EASY Cod Saltimbocca
- 3/4 pound boneless cod fillets
- 1/3 cup fresh parsley leaves
- fresh cracked black pepper
- 1 (4 ounce) package of sliced prosciutto
- olive oil cooking spray
Rinse the cod fillets and pat dry with a paper towel.
Sprinkle each fillet with some fresh cracked pepper.
Place a bunch of parsley leaves on top of each fillet.
Spray a medium non-stick skillet with olive oil. Heat the skillet on medium heat for a few seconds. Add the cod, and cook for 4 to 5 minutes per side, until the prosciutto is crisp around the cod, and the fish is opaque.
Remove and serve with our easy garlicky broccolini on the side.
