EASY Cod Saltimbocca

 

EASY Cod Saltimbocca is boneless cod fish wrapped with prosciutto, and sautéed until the prosciutto cooks to a crispy crust.  Paired this seafood dish with a side of our garlicky broccolini and you’ll have  dinner ready in less than 25 minutes!

This recipe is not only easy to make, but it was one of the easiest dinner I have ever made.

Simply because sautéed broccolini took about 5 minutes to make and the cod fish cooked very quickly as well. 

The prosciutto and fresh parsley give enough flavor to the cod; therefore, no need to add any salt nor the need for additional seasonings.

Besides, this cod saltimbocca is a nice twist on the expected Italian version of the veal saltimbocca we usually have.

What is Cod?

  • Cod fish is a white meaty fish and the taste is not fishy at all. 
  • Cod is a cold water fish, not farmed raised.  It’s a fish that is very high in Omega-3 fatty acids, magnesium and high in protein. 
  • In fact, a 3-ounce serving of cooked cod is only 90 calories, contains 19 grams of protein, and 134 milligrams of omega-3 fats.

I think, even “non-fish” lovers will like this dish.  The crispy prosciutto makes the cod so tasty, even my daughter enjoyed it.

Ingredients Needed for EASY Cod Saltimbocca:

  • 3/4 pound boneless cod fillets
  • 1/3 cup fresh parsley leaves
  • fresh cracked black pepper
  • 1 (4 ounce) package of sliced prosciutto
  • olive oil cooking spray

Directions How To Make Easy Cod Saltimbocca?

1. Rinse the cod fillets and pat dry with a paper towel.
2. Sprinkle each fillet with some fresh cracked pepper.

3. Place a bunch of parsley leaves on top of each fillet.

4. Wrap the prosciutto around each fillet, using 2 or 3 slices, depending on the size of each piece of fillet.

5. Spray a medium non-stick skillet with olive oil.  Heat the skillet on medium heat for a few seconds.  Add the cod, and cook for 4 to 5 minutes per side, until the prosciutto is crisp around the cod, and the fish is opaque.

6. Remove and serve with our garlicky easy sautéed broccolini on the side.

  1. I have never had saltimbocca "anything,", I love both prosciutto and cod. This idea is appetizing and so beautifully depcited, here. Clearly, something good came from that ice storm – Love it!

    1. Thanks Roz, it is definitely a keeper in ours too! So funny, we went out with friends this past weekend for dinner, and one of the specials offered was cod wrapped in prosciutto over risotto- I had to laugh, it was a funny coincidence.
