Slow Cooked Beef Brisket in Wine
Everyone loves this recipe for our brisket, and it makes enough to feed a large family and still have leftovers. Make it on Sunday, and then serve the leftovers during the week for another easy dinner. The flavorful red wine gravy goes perfectly over the meat and with a side of our cheesy mini biscuits, and best creamy mashed potatoes. YUM!
Plus, this recipe can be easily adapted to a Crockpot, Instant Pot, or Slow Cooker.
Tips for Success…
- The addition of onions and green peppers to the wine gravy enhances the flavor of this brisket as they dissolve while slowly cooking. So don’t leave them out.
- Therefore, we highly recommend using an electric mini chopper to mince (and even puree) the onions and peppers as finely as possible.
Serve this brisket with a side of our easy garlic mashed potatoes, or creamy mashed potatoes to soak up some of that delicious gravy.
This is our family’s recipe for oven-baked brisket, and everyone goes bonkers over it! But whether you make the brisket in the oven or your electric slow cooker, it always comes out perfect every time!

Directions to make our Slow-Cooked Brisket:
Let’s discuss the steps to making our brisket in our slow cooker appliance: (*Full recipe card below!)
1. First, season the brisket generously with salt, pepper, and garlic powder and place it into the slow cooker, facing the side with the fat on the bottom.
2. Next, add the sprigs of thyme on top and pour in the red wine. Turn the slow cooker on HIGH.
3. Scatter around the brisket with the garlic, green pepper, onion, carrots, and cherry tomatoes evenly.
4. Meantime, mix one package of au jus gravy mix with 2 cups of water, and stir until it’s completely dissolved. Pour over and around the brisket.
5. Cover and cook on “High” until the brisket is tender, about 4.5 to 5 hours. Transfer brisket to a cutting board and let rest for 10 minutes, then slice thinly against the grain. NOTE: The meat is so tender, it may fall apart as you slice.
6. Then transfer the meat onto a deep serving platter, spoon vegetables and gravy around the meat, and serve! It’s that easy!!
