Lunchbox Peppers Sauteed in Garlic and Olive Oil

Lunchbox Peppers Sauteed in Garlic and Olive Oil are mini, sweet-tasting little bell peppers that are slowly sauteed in a skillet with fresh garlic and olive oil, until slightly charred.  Delicious tasting and perfect to serve as a side vegetable with some grilled meats or fish.  Add them to sandwiches, or eat them alone as a snack.

Lunchbox Peppers are packaged in a bag with an assortment of them in red, yellow, and orange colors.  They are usually tossed in salads or added to lunchboxes as a snack. 

However, I prefer to slowly saute them on the stovetop.

One package will suffice as a side dish for 4 servings. 

If you plan to serve them with for company, make 2 packages, because, after one taste, your family and friends will come back for seconds, and more!

 

How To Prepare Lunchbox Peppers Sauteed in Garlic and Olive Oil…

  • First, open a bag and toss the peppers in a large skillet with some olive oil, garlic, and salt.  And slowly cook them.  That’s it!

  • No need to embellish these peppers, they are simple, yet very flavorful.  I like to cook them low and slow, turning them until they’re slightly charred on each side. 

  • Sauteing these Lunchbox Peppers slowly is the key!

These lunchbox peppers are so yummy that it’s worth the extra time it takes to cook them.

Summertime is about slowing down, enjoying the lazy days, and spending quality time with family and friends.  It’s a time when we don’t have to rush to make a meal either.

Sauteing these mini bell peppers is wonderful and will need a little time and patience. But worth it!

Ingredients Needed for Lunchbox Peppers Sautéed with Garlic and Olive Oil:

  • 1 package of Lunchbox Peppers (about 16 – 20 peppers)

  • 2 Tbsp. olive oil, and maybe extra

  • 3 garlic cloves, sliced

  • salt, and pepper to taste

In a large skillet, heat olive oil on low heat.

Add garlic and peppers, and cover with a large splatter screen.

Sauté on the lowest heat, turning the peppers every few minutes until they are slightly charred and softened.

Add some salt and pepper, to taste.  Before removing them, you may drizzle a little extra virgin olive oil over them, about 2 teaspoons.

Remove and transfer them to a serving platter and serve.  Cover with foil wrap to keep them warm until you are ready to serve them.

  1. In a large skillet, heat olive oil on low heat.
  2. Add garlic and peppers, and cover with a large splatter screen.

    1. Thanks Dan! We grew up with our mom cooking peppers this way and we have to tell you they are so tasty, you can add them to anything.
