Caramelized Butternut Squash
Our Caramelized Butternut Squash will melt in your mouth with every bite. Chunks of butternut squash are easily sauteed in a skillet with olive oil, onion, rosemary, along red pepper flakes to give it some heat until the butternut is softened and caramelized. YUM! A wonderful, tasty side dish will surely become a new favorite this fall season.

Butternut squash is a bright orange vegetable, related to the pumpkin and other winter squashes. You can find it already pre-cut in most supermarkets.
But in case you don’t, you may find pre-cut butternut squash in the freezer section at supermarkets. It’s a time-saver!
This is a wonderful vegetable to keep on rotation throughout the fall and winter seasons. From soups to casseroles to pasta dishes, you can use butternut squash in so many recipes.

Caramelized Butternut Squash
Our Caramelized Butternut Squash will melt in your mouth with every bite. Chunks of butternut squash are easily sauteed in a skillet with olive oil, onion, rosemary, along with red pepper flakes to give it some heat until the butternut is softened and caramelized.

Ingredients
- One package of fresh (pre-cut) Butternut Squash ( about 12-16 oz.)
- 1 large onion - chopped
- 1/8 tsp. crushed red pepper
- 1/8 tsp. dried rosemary
- 1/4 cup of extra virgin olive oil
- 1 Tbsp. of butter
- salt & pepper to taste
Instructions
- Take the pre-cut Butternut Squash and cut once again into one-inch pieces.
- In a large non-stick skillet, heat oil and butter on medium heat.
- Add the chopped onion, and sauté until softened, for about 3 minutes.
- Add the squash and all the seasonings. Reduce heat to low and sauté for about 12 minutes or so until the squash has softened and caramelized.
- Season with salt and pepper to taste. And serve!
- Serves 4 to 6

Tried this recipe and it was great…easy and quick to make. I used shallots instead of onions and added just a pinch more cayenne ( I like my food spicy). I'm planning on trying a few of these recipes they sound delicious!
