Carrot and Spinach Dip
Need a quick and delicious appetizer? Carrot and Spinach Dip is a delicious dip loaded with spinach, fresh carrots, celery, plus 5 additional ingredients. It’s simple to make, and about 10 minutes to prepare, this luscious dip will make the perfect appetizer for entertaining.
We love to incorporate fresh vegetables into simple dips like this one. This recipe is adapted from our favorite dip, our easy cold spinach dip.
Any time we add more fresh veggies into a dip = a healthier appetizer!
Everyone loves this carrot and spinach dip – hands down!
For me, this carrot and spinach dip works as the perfect appetizer while everyone is waiting for dinner. It allows me to get dinner on the table without the pressure. If everyone is happy munching on something that contains veggies, than I am too.
This dip is no only lusciously creamy and so delicious, but also offers a crunchy texture with every bite.
This recipe yields 4 cups. So don’t let our photo fool you.

- For additional crunchy texture, I added some chopped water chestnuts into the mixture. The water chestnuts will add a depth of more flavor and a crunchy delicious texture to this dip.
- This carrot and spinach dip is best served chilled, at least 2 hours before serving.
- But if you chill it overnight, it’s even better!
It is so amazingly good – you’ll want to make it often!

Carrot and Spinach Dip
Carrot and Spinach Dip is an appetizer dip loaded with spinach, fresh carrots, celery, red onions, sour cream, mayonnaise, and a vegetable soup mix. Served chilled, it's easy, creamy, and delicious, and it makes the perfect appetizer every time!

Ingredients
- 3 small carrots
- 1 stalk of celery
- 1 (10 ounces) frozen spinach- defrost, squeeze out excess water
- 1/4 cup red onion or 1/2 cup sweet onion
- 1/2 cup mayonnaise
- 1 (16 ounces) sour cream
- 1 package of vegetable soup mix
- Optional: 1 can (whole) water chestnuts - chopped
Instructions
- With an electric chopper or (mini-prep plus by Cuisinart ), pulse the carrots, celery, and red onion until they are shredded and minced very finely. Transfer to a mixing bowl.
- Thaw the frozen spinach, drain and squeeze out excess water. Add the spinach along with the remaining ingredients to the carrots mixture and stir until well combined.
- Transfer to a serving dip bowl, garnish on top with a sprinkle of minced carrot on top, and cover with plastic wrap.
- Chill for at least 2 hours before serving, or overnight. Serve with thin pieces of bread, crackers, or fresh veggies sticks.
- Best served chilled.
