Chocolate Pudding and Raspberries

Chocolate pudding and raspberries are delightful together. A perfect sweet treat that is bite-size, quick, easy to make, and satisfying! These individual pastry shells, called “cups” are just the right amount of sweetness and size needed to serve as an after-dinner treat. 

We’re having company tonight with some friends andย needed something quick and easy to whip up, and right before my guests arrived. ย 

So, I had to think quickly!  What can I make that does not require any cooking or baking? 

After looking into my freezer and fridge, I realized, that I had a few items I could put together and make something easy.  And decided to make chocolate pudding and raspberry treats!  I love the flavors of chocolate and raspberries together.  

Reasons To Love This Idea…

  • These treats are very cute and bite-size. 
  • There’s no need for plates or spoons when serving, just a napkin will do. 
  • It was perfect because when entertaining sometimes we don’t have a lot of time to make everything. 
  • This was quick and very easy to put together.
  • No downtime whatsoever. 
  • A great idea and little treat when you’re in a pinch for something sweet. 

Best of all, only need to chill before serving!

Ingredients Needed for Chocolate Pudding and Raspberry Treats:

For this easy recipe, you will need the following ingredients:

  • Frozen Mini Fillo Pastry Shells: These are located in the frozen section of your local supermarket. 
  • Chocolate Pudding: You will need one container of chocolate pudding, and to make it easier, I used Cozy Shack pudding. Also, can be found at your local supermarket.
  • Fresh Raspberries: One fresh raspberry to place on top is the perfect amount for this dessert.
  • Powdered Sugar: Sprinkle on top, as a pretty garnish.

How to Make Chocolate Pudding and Raspberry Treats?

There are 3 easy steps to making these little chocolate treats!

  1. Thaw the pastry shells for a minute or two. 
  2. Spoon some chocolate pudding into each one.
  3. Top each one with a fresh raspberry.  And in a few minutes – poof!  Chocolate pudding and raspberry treats are ready for dessert!

QUICK TIP: Chill before serving. Sprinkle some powdered sugar on top just before serving.ย  They make an elegant presentation.ย

There are so many ways to create bite-size treats like these and serve them for brunch, holidays, and parties. Here are a few ideas you can fill these fillo cups with:

  • choose your favorite pudding flavor and top with berries on top.
  • try it with bite-size watermelon with feta.
  • fill them with some whipped cream and top with crushed Oreos.
  • or whipped cream cheese and raspberry jam on top.

Ingredients

  • 2 packages ( about 15 in each package) of Athens Mini Fillo Shells
  • 1 container of Cozy Shack Chocolate Pudding
  • basket of fresh raspberries
  • white powdered sugar - to garnish

Instructions

    1. Open the packages of mini fillo shells, and allow them to defrost for about 1 to 2 minutes.

    2. Take a very small teaspoon or espresso spoon, and spoon a small amount of chocolate pudding into each shell.  Filling each shell about 3/4 with the pudding. Be careful not to overfill.

    3. Top each one with one fresh raspberry. 

    4. Garnish with a sprinkle of powdered sugar on top.

    5. Immediately refrigerate.  Best to prepare just before guests arrive. When ready to serve, display them on a lovely platter and serve.
