  • Lemon Juice – use fresh lemon juice for the best flavor. We prefer “fresh lemon juice” over using bottled lemon juice, which is loaded with additives.
  • Salt – use sea salt or kosher salt works best.
  • Mayonnaise – you will only need 2 tablespoons for our recipe.
  • Sugar – a small amount of sugar to balance out the acidity.

  2. Next, bring a pot of water to boil, and toss in the shrimp. Cook the shrimp until it turns opaque-pink, less than 5 minutes.
  3. Drain the shrimp in a colander.
  4. Toss the shrimp into a bowl, add all the ingredients, and toss to combine.
  5. Then chill the shrimp salad for a few hours before serving. That’s it!

Ingredients

  • 1 pound large fresh Shrimp - cleaned, deveined, cut in halves
  • 2 celery stalks - diced
  • 1 carrot - diced
  • 1/4 cup red onion - diced
  • 1/2 teaspoon sugar
  • 1 large lemon - juiced
  • 2 Tbsp. mayonnaise
  • sea salt or kosher salt
  • optional: fresh cracked black pepper to taste

Instructions

  1. Clean and devein shrimp, cut off, and discard tails.
  2. In a bowl, run cold water over the shrimp and rinse well for a few minutes. Drain in a colander.
  3. Fill a medium-size pot with water, and bring water to a low boil on the stovetop.
  4. Add the shrimp, and boil the shrimp for about 3 minutes, until the shrimp have turned pink.
  5. Drain shrimp in a colander for a few minutes, and allow it to cool.
  6. Meanwhile, in a medium bowl, add the celery, carrot, red onion, mayonnaise, sugar, and lemon juice.
  7. Add the shrimp, some salt, and pepper to taste. Mix until well combined.
  8. Cover with clear wrap and refrigerate for a few hours before serving. This will allow all the flavors to marinate with the shrimp. Best served chilled.
  9. Serves 4 to 6
