It is made with sliced potatoes, fresh tomatoes, chopped onions, and herbs and baked until the potatoes are fork-tender.

How to Make Them?
Here is a quick overview with 3 simple steps to follow:
1. Simply peel and slice the potatoes. 2. Next, toss them in a large casserole dish with olive oil, chopped tomatoes, and seasonings. 3. Roast in the oven for about 1 hour. Remove and serve.
Easy Directions To Make Roasted Potato Marinara…
1. Preheat the oven to 375 degrees F (190C).
2. Place all ingredients into a large roasting pan. Toss the potatoes, using your hands (or with 2 large wooden spoons) until all potatoes are well coated with onions, tomatoes, seasonings, and olive oil.
3. Roast for about 1/2 hour. Then turn the potatoes once, and continue to roast for additional 20 to 30 minutes, or until the potatoes are golden brown and tender to the fork. NOTE: If you like them to be “crispy potatoes” – then leave them in a few minutes longer.
4. Remove from oven and transfer to a serving platter. Serve warm. Yields: 6 to 8 servings
Cooks Notes and Tips…
- Some ovens may vary with temperatures. You may need to increase the temperatures slightly to get the potatoes golden.
- And, if the potatoes look like they are getting dry, drizzle some extra-virgin olive oil over them to keep them moist.
- Potatoes are ready when a fork easily slides through them.

Roasted Potato Marinara
Roasted Potato Marinara is made with sliced potatoes tossed with fresh veggies, olive oil, and seasonings. Then they are roasted until they are softened and tender. An ideal side dish to complement any meat, poultry, or fish.
Ingredients
- 6 baking potatoes- peeled, sliced 1/4 or 1/3-inch thick
- 2 medium onions- diced
- 2 ripe tomatoes- chopped
- 2 Tbsp. grated Pecorino cheese
- 1/2 tsp. salt
- 1/2 tsp. dried oregano
- 1/2 tsp. dried rosemary
- 1/4 tsp. cayenne pepper
- 1/3 cup extra-virgin olive oil
Instructions
- Preheat oven to 375 degrees F (200C).
- Place all ingredients into a large roasting pan.
- Using your hands or two large spoons toss the potatoes until all potatoes are well coated with onions, tomatoes, seasonings, and olive oil.
- Roast for 25 to 30 minutes, turning the potatoes once, to bake evenly.
- Continue to roast for additional 20 to 30 minutes, or until the potatoes are golden brown and tender to the fork. NOTE: If you prefer crispy potatoes, leave them in the oven for a few minutes longer.
- Remove from oven and transfer to a serving platter. Serve warm.
- Serves 6 to 8

Love potatoes however I can get them!
I've never had this before but I am gong to make it. I love it for two reasons: I love the flavor infusion process, this to me is the meat and potoatoes (no pun intended) of cooking. Far too often I don't tink of this crtitical element when in the kitchen. Secondly, that it came fromy your mom. That qulification alone elevates it to a top tier position in my book.
